Ingredients
  

Pumpkin Batter

  • 3 Large Eggs
  • 1 1/2 Cups Pumpkin Puree
  • 1/3 Cups Oil Vegetable or Canola
  • 2 tsp Vanilla Extract
  • 2/3 Cups Granulated Sugar
  • 1/2 Cups Brown Sugar
  • 1 1/2 Cups All Purpose Flour
  • 1 tsp Baking Soda
  • A Pinch Ground Ginger
  • A Pinch Ground Cardamom
  • 1 tsp Pumpkin Spice
  • 1 tsp Cinnamon

Pepita Topping

  • 1/3 Cups Pepitas Pumpkin Seeds
  • 1 tbsp Granulated Sugar
  • 1 tsp Pumpkin Spice
  • 1 tsp Honey
  • 1 tsp Oil Vegetable or Canola

Instructions
 

  • Preheat oven to 350 degrees
  • Grease Loaf Pan with oil or butter
  • Wisk wet ingredients together
  • Wisk dry ingredients together
  • Slowly mix in dry ingredients into the pumpkin puree mixture
  • Pour batter mixture into the greased loaf pan
  • In a separate bowl mix together pepita ingredients
  • Sprinkle pepita mixture on top of batter
  • Bake 50-60 min or until center is cooked (stick a large tooth pick or butter knife in center, if it comes out clean its ready)
  • Let cool in pan for 15-20 min before transferring to cooling rack
  • Cool completely before slicing
  • Slice and Enjoy!

Easy and delicious pumpkin bread filled with pumpkin puree, spices and topped with honey pepita seed glaze (aka pumpkin seeds!). Pairs perfectly with your morning coffee or an afternoon snack with a nice hot cup of cider.
