Homemade Green Bean Casserole

Ingredients
  

Green Beans

  • 4 Cups Fresh Chopped Green Beans
  • 1 Yellow Onion
  • 4-5 Cloves Garlic
  • 1 Cup Chopped Mushrooms
  • 1 1/2 Cups Chicken Stock
  • 1 Cup Heavy Cream
  • 3 tbsp Flour
  • 2 Cups Fresh Parmesan
  • Green onions
  • 1 tsp Tony Chachere's
  • Salt/Pepper

Fried Shallots

  • 4 Shallots
  • Frying Oil
  • 1 Cup Milk
  • 1/2 Cup Flour Plus additional flour to for breading
  • Salt/Pepper

Instructions
 

  • Preheat oven to 400
  • Dice onion, mince garlic, chop mushrooms, green onion whites and all the green beans into about 2 inch pieces. Cut shallots into very thin rings or strings (whichever you prefer)
  • Grate 2 cups of fresh parmesan 
  • In a medium pot heat a little bit of oil and throw in all of the yellow onion and green onion whites and let them cook down a little then add in garlic and mushrooms.
  • Once the onion, garlic and mushrooms have softened add in chicken stock, heavy cream, parmesan and flour
  • Constantly stir for about 5 minutes until mixture starts to thicken
  • Add in green beans, stir and let simmer letting the green beans soften in the mixture. Occasionally stir
  • While the green beans are simmering you can start on the fried shallots!
  • In a small bowl mix together 1/2 cup of flour, milk and salt and pepper to make your batter
  • Have a separate bowl of just flour ready to coat your shallots
  • In a medium pot pour frying oil about 2 inches 
  • Once oil reaches to about 360 degrees they shallots are ready to be fried
  • Grab a handful of shallots, dip them in the batter, then into the flour and ~carefully~ place them into the oil
  • Let onions sit in oil for about 1 minute on each side. Then using a frying skimmer or tongs fish them out and place them on a wire cooling rack or on a plate with a napkin to soak up leftover grease.
  • Once all shallots have been fried set aside
  • Transfer green beans into an oven safe casserole dish and mix in about a handful of the fried shallots
  • Put the remainder of the shallots on top of the green beans and then place in the oven for about 10-15  min or until bubbling
  • Let sit for 5 min before serving
  • Enjoy!
