Ingredients
  

Funfetti Cupcakes

  • 1 cup Unsalted Butter Soften
  • 1.5 cups Granulated Sugar
  • 4 tsp Vanilla Extract
  • 4 Egg Whites
  • 1 cup Milk
  • 1 packet Instant Vanilla Pudding
  • 1.5 cups Cake Flour
  • 1 cup All Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Salt
  • 1/2 cup Rainbow Sprinkles Jimmies

Vanilla Buttercream Icing

  • 1 cup Unsalted Butter Soften
  • 4 cups Powdered Sugar
  • 3 tsp Vanilla Extract

Instructions
 

Funfetto Cupcakes

  • Preheat oven to 350. Line a 12 cup muffin tin with cupcake liners (will make a little over 12 cupcakes so you may want to have another tin handy for the extra batter)
  • Cream together butter & sugar
  • Add in vanilla extract and egg whites mix on high until nice and whipped
  • In a separate bowl, whisk together flour, baking soda and salt
  • Next you'll mix in the milk and slowly add your dry ingredients
  • Once thoroughly mixed you will gently stir in the sprinkles using pastry spatula
  • Make sure the sprinkles are evenly mixed but do not over mix as this can cause the battery to fall and the sprinkles may sink to the bottom
  • Place cupcake liners in your cupcake tin and fill liners 3/4 full. You want to give them room to rise so filling them all the way may cause an overflow
  • Pop in the oven for 25-30 min or until a toothpick comes out clean
  • Let cool completely before icing and topping with sprinkles and any other topping you desire!

Vanilla Buttercream Icing

  • Cream butter and slowly add in powdered sugar
  • Once well mixed add in vanilla extract, mix well
