Funfetti Cupcakes
- 1 cup Unsalted Butter Soften
- 1.5 cups Granulated Sugar
- 4 tsp Vanilla Extract
- 4 Egg Whites
- 1 cup Milk
- 1 packet Instant Vanilla Pudding
- 1.5 cups Cake Flour
- 1 cup All Purpose Flour
- 2 tsp Baking Powder
- 1 tsp Salt
- 1/2 cup Rainbow Sprinkles Jimmies
Vanilla Buttercream Icing
- 1 cup Unsalted Butter Soften
- 4 cups Powdered Sugar
- 3 tsp Vanilla Extract
Funfetto Cupcakes
Preheat oven to 350. Line a 12 cup muffin tin with cupcake liners (will make a little over 12 cupcakes so you may want to have another tin handy for the extra batter)
Cream together butter & sugar
Add in vanilla extract and egg whites mix on high until nice and whipped
In a separate bowl, whisk together flour, baking soda and salt
Next you'll mix in the milk and slowly add your dry ingredients
Once thoroughly mixed you will gently stir in the sprinkles using pastry spatula
Make sure the sprinkles are evenly mixed but do not over mix as this can cause the battery to fall and the sprinkles may sink to the bottom
Place cupcake liners in your cupcake tin and fill liners 3/4 full. You want to give them room to rise so filling them all the way may cause an overflow
Pop in the oven for 25-30 min or until a toothpick comes out clean
Let cool completely before icing and topping with sprinkles and any other topping you desire!
