Pumpkin Pecan Granola

Equipment

  • Large mixing bowl
  • Baking sheet
  • Medium saucepan

Ingredients
  

  • 3 cups Rolled Oats
  • 1 1/2 cups Pecans
  • 1/2 cup Pepitas (Pumpkin Seeds)
  • 1/3 cup Coconut Flakes
  • 3 tbsp Dark Brown Sugar packed
  • 1 tsp Pumpkin Spice
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1/3 cup Pumpkin Puree
  • 1/4 cup Coconut Oil
  • 1/3 cup Maple Syrup

Instructions
 

  • Preheat oven to 325
  • In a large mixing bowl combine all dry ingredients - oats, pecans, pumpkin seeds, brown sugar and spices
  • In a medium saucepan heat pumpkin puree, coconut oil and maple syrup on the stove until well combined
  • Pour the wet mixture into the dry ingredients and mix together until evenly dispersed
  • Spread granola evenly on a baking sheet either lined with parchment paper or lightly greased with oil
  • Bake for 30-35 min until the pumpkin granola turns golden brown, stirring halfway through
  • Let cool before stirring again to let the pumpkin granola clump up, about 15-20 min
  • Enjoy with some yogurt, milk or by itself!
