Blood Orange Frosted Sugar Cookies

Blood orange zest sugar cookies topped with naturally pink blood orange icing.

Ingredients
  

Orange Sugar Cookie

  • 1 cup unsalted butter softned
  • 1/2 cup granulated sugar
  • 1 cup powdered sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • zest of 1 large orange
  • 1 large egg
  • 1 cup almond flour
  • 2 cups all purpose flour

Blood Orange Icing

  • 1/2 cup fresh squeezed blood orange juice
  • 4 cups powdered sugar

Instructions
 

  • Cream together butter, sugars, salt, vanilla, egg and zest
  • Gradually mix in both flours until mixture comes together in a ball, do not over mix!
  • Cover dough in plastic wrap and let chill in the fridge for 30 min
  • Preheat oven to 350
  • Allow dough to come to room temperature then roll on a floured surface about 1/4" thick
  • Cut dough into desired shapes and place on a lined baking sheet
  • Bake for 11 min until the edges are slightly browned
  • Transfer to cooling rack and let cool completely before icing
  • Dip the tops of each cookie into the icing and place back on the cooling rack letting the icing layer dry before dipping again (about 3-4 dips or until desired thickness of icing on each cookie)
