Celebrate everything with these deliciously fluffy homemade funfetti cupcakes!
One Year
This month my blog turns 1 year old!! I decided to finally get going the same week the pandemic began so I guess you could say this has been my pandemic project. With all the extra time on my hands I was able to dive deep and do some research on how to get started.
While I still have a long way to go, I am very proud of what I have accomplished this past year. It has been a great distraction from everything that has gone on in 2020. With that being said I am glad you are here to celebrate with me with these funfetti cupcakes!
Funfetti Cupcakes
Who doesn’t love sprinkles??? I mean come on what’s not to love about a pop of color on any sweet treat. Don’t even try to tell me they don’t taste like anything because they absolutely do!
While funfetti cupcakes are simply just vanilla cake and sprinkles, it was actually a little challenging to get them just right.
At first there wasn’t enough flavoring and the sprinkles sank to the bottom, it was very disappointing which is hard when it comes to funfetti cupcakes. You spend all that time on something and then it doesn’t taste great? Nope
What ended up being the magic ticket was using a packet of vanilla instant pudding mix and making sure the egg whites were whipped! This created a fluffy mixture so the sprinkles stayed in place and didn’t sink to the bottom while in the oven.
Topped with some delicious vanilla butter cream, more sprinkles (and some lucky charms marshmallows of course because it is march) and voila! Perfectly moist, delicious and festive funfetti cupcakes.
What You’ll Need for Funfetti Cupcakes
Funfetti Cupcakes
- Unsalted Butter
- Granulated Sugar
- Vanilla Extract
- Egg whites
- Milk
- Instant Vanilla Pudding
- Cake Flour
- All Purpose Flour
- Baking Powder
- Salt
- Rainbow Sprinkles (Jimmies)
Icing
- Butter
- Powdered Sugar
- Vanilla Extract
How to Make Homemade Funfetti Cupcakes
Funfetti Cupcakes
- Preheat oven to 350. Line a 12 cup muffin tin with cupcake liners (will make a little over 12 cupcakes so you may want to have another tin handy for the extra batter)
- Cream together butter & sugar
- Add in vanilla extract and egg whites mix on high until nice and whipped
- In a separate bowl, mix together dry ingredients
- Next you’ll mix in the milk and slowly add your dry ingredients
- Once thoroughly mixed you will gently stir in the sprinkles using pastry spatula
- Make sure the sprinkles are evenly mixed but do not over mix as this can cause the battery to fall and the sprinkles may sink to the bottom
- Place cupcake liners in your cupcake tin and fill liners 3/4 full. You want to give them room to rise so filling them all the way may cause an overflow
- Pop in the oven for 25-30 min or until a toothpick comes out clean
- Let cool completely before icing and topping with sprinkles and any other topping you desire!

- 1 cup Unsalted Butter Soften
- 4 cups Powdered Sugar
- 3 tsp Vanilla Extract
