Pumpkin Pecan Granola
Fall is in the air and you know what that means! PUMPKIN SZN. I’m a huge fan of anything pumpkin, but they are not always winners. This pumpkin pecan granola, however, is in fact a winner!! There are so many ways to eat it too! My favorite way to eat it is with some yogurt but you can also eat it like cereal with some milk, sprinkle over some oatmeal or even just by itself.
The best part about making a big batch of this pumpkin pecan granola is having your house smell like you just lit the best fall scented candle. As a result you’ll have plenty of homemade pumpkin granola for breakfast all week!
Simple and Easy
Homemade granola is so easy to make and so much cheaper than store bought varieties. Plus its so much more fresh and satisfying when making it yourself. My homemade pumpkin granola is a simple mixture of oats, pecans, pumpkin seeds and spices lightly coated in a combination of coconut oil, pumpkin puree and maple syrup. One of the cleaner pumpkin recipes this season!
But best of all, it’s easy to make! Just mix together the dry ingredients, drizzle in the wet ingredients, and mix it all together. Bake for 30 minutes, and it’s ready to go. Healthy, simple, and totally delicious, this recipe is guaranteed to make you a homemade granola convert(and a pumpkin lover)
Ingredients you’ll need for Pumpkin Pecan Granola
- Rolled Oats
- Pecans
- Pepitas (Pumpkin Seeds)
- Coconut Flakes
- Brown Sugar
- Salt
- Pumpkin Pie Spice
- Cinnamon
- Pumpkin Puree
- Coconut Oil
- Maple Syrup
How to make Pumpkin Pecan Granola
- Preheat oven to 325
- In a large mixing bowl combine all dry ingredients
- In a medium saucepan heat wet ingredients on the stove until well combined
- Pour the wet mixture into the dry ingredients and mix together until evenly dispersed
- Spread granola evenly on a baking sheet
- Bake for 30 -35 min, stirring halfway through
- Let cool completely before stirring and enjoy!

Equipment
- Large mixing bowl
- Baking sheet
- Medium saucepan
Ingredients
- 3 cups Rolled Oats
- 1 1/2 cups Pecans
- 1/2 cup Pepitas (Pumpkin Seeds)
- 1/3 cup Coconut Flakes
- 3 tbsp Dark Brown Sugar packed
- 1 tsp Pumpkin Spice
- 1/2 tsp Cinnamon
- 1/4 tsp Salt
- 1/3 cup Pumpkin Puree
- 1/4 cup Coconut Oil
- 1/3 cup Maple Syrup
Instructions
- Preheat oven to 325
- In a large mixing bowl combine all dry ingredients - oats, pecans, pumpkin seeds, brown sugar and spices
- In a medium saucepan heat pumpkin puree, coconut oil and maple syrup on the stove until well combined
- Pour the wet mixture into the dry ingredients and mix together until evenly dispersed
- Spread granola evenly on a baking sheet either lined with parchment paper or lightly greased with oil
- Bake for 30-35 min until the pumpkin granola turns golden brown, stirring halfway through
- Let cool before stirring again to let the pumpkin granola clump up, about 15-20 min
- Enjoy with some yogurt, milk or by itself!
